Perilla frutescens var. crispa Powder is a product made from perilla leaves that have been freeze-dried and ground into a fine powder. How many types of perilla leaves are there?

1. Green Perilla:

  • Characteristics: Leaves are green on both sides, with a mild and slightly sweet flavor.
  • Uses: Often used raw, as a seasoning for salads, wraps, or as an accompaniment to grilled dishes.

2. Red Perilla:

  • Characteristics: Leaves are purple on both sides, with a stronger flavor than green perilla, and a slightly spicy taste.

Production process

1. Material Selection:

  • Harvesting: Perilla leaves are harvested when they reach maturity, ensuring the best flavor and nutritional value.
  • Selection: Choose fresh leaves that are free from pests, diseases, and damage.

2. Washing and Chopping:

  • Washing: Perilla leaves are washed to remove dirt and impurities.
  • Chopping: Perilla leaves are chopped to facilitate the drying and grinding process.

3. Freeze-drying:

  • The product is placed in a closed, continuous, circulating freeze-drying chamber using dry air with a humidity of only about 10-30% at a temperature of 35-60 degrees Celsius. Freeze-drying helps preserve the color and nutrients of the food, and is currently the most preferred drying method due to this feature.

4. Grinding into powder:

  • After drying, the product is ground into a fine powder using a specialized grinder.

5. Packaging:

  • The product is packaged in moisture-proof packaging in a cleanroom environment to ensure the product quality is completely clean and to prevent cross-contamination.
