How many types of celery are there?

1. American celery (Pascal Celery):

  • Characteristics: This is the most common type of celery in Western countries. American celery stalks are large, thick, and crisp, with a bright green color.
  • Uses: Primarily used in cooking, salads, or eaten raw.

2. Chinese Celery:

  • Characteristics: Chinese celery has smaller and thinner stalks compared to American celery, with darker green leaves and a stronger flavor.
  • Uses: Often used in Asian cuisine, especially in stir-fries, soups, and salads.

3. Japanese Celery (Mitsuba):

  • Characteristics: Mitsuba celery has slender stems, large leaves, and a milder flavor compared to American and Chinese celery.

Production process

1. Ingredient Selection:

2. Washing and Chopping:

  • Washing: Celery is washed to remove dirt and impurities.
  • Chopping: Celery is chopped to facilitate the drying and grinding process.

3. Freeze-drying:

  • The product is placed in a closed, continuous, circulating freeze-drying chamber using dry air with a humidity of only about 10-30% at a temperature of 35-60 degrees Celsius. Freeze-drying helps preserve the color and nutrients of the food; it is currently the most preferred drying method due to this advantage.

4. Grinding into powder:

  • After drying, the product is ground into a fine powder using a specialized grinder.

5. Packaging:

  • The product is packaged in moisture-proof packaging in a cleanroom environment to ensure the product quality remains completely clean and to prevent cross-contamination.
